the French Tickler cocktail (a variation on a French 75)

i'm pretty proud of this creation! after finding out what a French 75 was (gin, champagne, lemon juice, simple syrup) i had decided that i didn't want to buy plain champagne to try one, and tried to imagine a version where i could use my favorite form of sparkling rosé wine: Lolea Spritz. i also thought simple syrup was a bit too boring, and luckily had recently received my newest Monin haul, which included the Strawberry Rose flavor - which ended up pairing lovely with the other ingredients.

Substitutions: Lolea Spritz is a unique sparkling rosé in that it's labelled as an apertif and is almost more of a sangria (made with hibiscus and raspberry) than just a simple sparkling wine. i have yet to test if a standard sparkling rosé would be just as good. you might try other gins as well, but i find the botanicals in Bombay Sapphire go well with the other ingredients - and it's also probably just my favorite gin. lastly, you could probably put the gin, lemon juice, and syrup into a cocktail shaker with ice to chill it that way and forego the ice cubes, if you're not lazy like me.
